1 cup baby carrots
l large yellow squash halved and cut into pieces
3 red peppers cut into 1 inch dice
1 fennel bulb cut into wedges
1 large zucchini, halved and cut into pieces
2 red onions, cut and wedged
2 tablespoons olive oil
2 1/2 teaspoon fresh oregano
2 1/2 teaspoons chopped mint
3/4 teaspoons salt
1/2 teaspoon dried marjoram
1/2 teaspoon black pepper
24 peeled garlic cloves
1. Pre heat oven to 450 degrees
2.Place oven rack on upper third
of oven and one on bottom.
3. Combine all ingredients in a large bowl.
4.Divide between 2 cookie sheets.
5.Bake for 12 to 15 minutes.
6. Rotate pans.
7. Bake for approx another 12
to 15 minutes until cooked to desired doneness.
8. Stir during cooking as needed.
