Rustic Black Rye Bread (ABM)
1 ½ cups water
2 T cider vinegar
2 ½ cups flour
1 cup rye flour
1 tsp salt
2 T butter
2 T molasses
1 tsp brown sugar
3 T unsweetened cocoa powder
1 tsp instant coffee granules
1 T caraway seed
½ tsp onion powder
2 tsp active dry yeast
Place ingredients into the bread machine in order suggested by the
manufacturer. Use the whole wheat, regular crust setting. Press
start.
After the baking cycle ends, remove bread from pan, place on a cake
rack, and allow to cool for 1 hour before slicing.
To make without bread machine: Mix everything together, let it rise
for about an hour. Punch it down. Form into a large round or oblong
loaf, and cut deep slashes across the top. Bake for about 35 minutes
at 350º.
