SASSY MANGO POUNDCAKE
INGREDIENTS:
½ cup Butter,softened 2 cups Sugar or Splenda for baking 5 Eggs or 1 1/4 cups of egg substitute 2-1/2 c. Flour,sifted well 1 T. Cornstarch ¼ t. Baking soda 1 c. Sour cream 2 Tablespoons FrozenOrange juice concentrate ½ c. Mango, pureed or mango nectar 2 Teapoons orange zest 1 teaspoon pure vanilla extract 1 teaspoon Orange extract 1 package unsweetened mango Kool-Aid
DIRECTIONS:
Beat butter; add sugar till pale & fluffy; add eggs 1 @ time; set aside. Whisk flour, cornstarch, soda in bowl whisk sour cream, zest, puree, extract, rum & Kool-Aid at low speed alternately add flour & sour cream. Spray bundt pan with PAM or grease, add mixture; bake @ 350° for 60-75 min.; let rest 20 min; turn out on rack to cool; dust w/confectioner's sugar.
