SMOKED PORK CHOPS WITH RED CABBAGE SERVES 4
2 t. oil 4 chops - 1-inch thick, smoked ¾ t. sage ¾ t. thyme 6 c. coarsely shredded red cabbage 1 ½ c. thinly sliced red onion ½ c. cider vinegar ½ c. water 3 T. brown sugar ¼ c. currant jelly
Heat oil; season chops with ½ t. sage and ½ t. thyme; brown in skillet; remove and cover loosely with foil. Add remaining sage and thyme to pan with remaining ingredients; bring to boil, reduce heat, cover and simmer 15 minutes or until cabbage is tender. Place chops on cabbage, cover and cook 5 to 7 minutes longer.
