2 large pita bread, cut into two 2 Tbs chopped red pepper 1 1/2 cup cooked chicken breast, diced 2 Tbs chopped cucumber 2 pcs. hard boiled eggs, chopped 1/4 cup mayonnaise 2 Tbs minced spring onion 1/2 tsp salt 2 Tbs minced parsley 1 dash pepper
Divide the above into four portions and stuff the above ingredients into the triangle shaped pita bread. Put into oven toaster and bake for 4 or 5 mins. Serve immediately with sliced tomatoes and lettuce.
