Sour Cream Pancakes




1 1/4 cups flour



1 1/2 tsp baking powder



1/4 tsp salt



3 tsp sugar



1 tsp baking soda



1 tsp oil



2 eggs, slightly beaten



1/2 cup sour cream



1 cup buttermilk




In a large bowl, combine flour, baking powder, salt, sugar & baking soda. Whisk to blend it together.

In another bowl combine sour cream and buttermilk (stir to smooth out a bit), then add your eggs and oil.

Stir into flour mixture until smooth. Spoon your batter (about 1/3 cup) per pancake onto your nonstick griddle (I spray with Pam) and flip when top is covered with bubbles or edges look cooked. Cook until browned.

Serve with your favorite syrup or I\'ve served with fresh strawberries.



Makes 12 medium size pancakes.

My Comments:
My mother-in-law came across this recipe in the Sunday paper\'s food section. I make these pancakes more for supper than breakfast. They do freeze well.
