Ingredients
1 med Onion, finely chopped 1 med red Bell Pepper, diced 1 Garlic Clove, minced 1 tbsp Vegetable Broth 2 Egg Whites 1/3 cup fat-free Milk 1/8 tsp Pepper 1/8 tsp dried Basil 2 cups fresh Spinach, cooked & drained 3 cups cooked Rice
Preheat oven to 350*. Cook onion, red pepper, and garlic in broth over med heat, about 5 minutes or until tender. Set aside. Combine egg whites, milk, pepper, and basil in a mixing bowl; stir well. Add spinach, rice and cooked vegetables to egg white mixture. Mix well. Coat a 1-quart casserole dish with non-stick cooking spray ( or wipe with a small amount of crisco on a paper towel). Spoon rice mixture into casserole dish. Bake, covered, for 30 - 35 minutes or until heated thoroughly.
