Title: Stuffed Zucchini

I absolutely love stuffed zucchini!

This can be eaten as a brunch dish or a side with a nice entree.

I can make a meal of this with a chunk of crusty homemade bread still warm from the oven!

Measurements are all approximate - I don't measure.




4 medium zucchini
1/4 cup onion, diced
1/2 cup Italian bread crumbs
1/2 cup mozzarella, shredded
1/2 lb. hot Italian sausage
1 garlic clove, crushed
1/4 cup Parmesan cheese




Cook zucchini in boiling water for 5 minutes, drain. Let cool, cut zucchini in half lengthwise, scoop out pulp leaving 1/4" shell. Place shells in a lightly oiled 13"x 9"x 2" baking pan. Mash pulp, drain well and set aside. Remove casing from sausage. Cook sausage, onion, and garlic in a skillet until sausage is browned stirring to crumble sausage. Drain fat. Combine sausage mixture, pulp, bread crumbs and cheese. Mix well. Spoon mixture into shells. Bake at 350 degrees for 10 minutes or until zucchini is tender. Sprinkle with mozzarella cheese and bake an additional 5 minutes. Serves 4.


If desired, top with a nice marinara to serve and use your bread for soppin'!
