1 sheet frozen puff pastry from a 17-1/4 pkg. Olive oil 1/2 cup grated white cheddar cheese 4-5 Italian tomatoes, cut into 1/4" slices Salt and pepper 2 Tbsp. fresh thyme leaves, finely chopped 1/2 cup freshly grated Parmesan cheese
Preheat the oven to 375*F. Spray a baking sheet with cooking spray. Meanwhile, remove the puff pastry from the freezer and allow to thaw for 20 minutes.
Unfold the pastry on the counter and using a 1-1/2" or 2" biscuit cutter, cut out rounds of dough. Place puff pastry rounds on the prepared baking sheet. Prick the surface of the pastry with a fork. Brush each round lightly with olive oil and top with a small amount of the Cheddar cheese, then with a slice of tomato. Sprinkle salt and pepper to taste over the tomato, then sprinkle on a pinch of thyme and about 1 tsp. of Parmesan cheese.
Bake for about 15 minutes. Let cool for 2-3 minutes before serving.
