Title: Watermelon Mint Julep

Posted by: ChefBelle

The water content of melon varied.  A total of 2 cups liquid is required  for this drink.

4-5 cups seedless watermelon, diced
1/2 cup bourbon
1/4 cup torn fresh mint leaves
2 Tbsp. sugar
1 Tbsp. fresh lime juice
Crushed ice
Fresh mint sprigs

Combine watermelon, bourbon, mint leaves, sugar and lime juice, in a bowl, let stand 5 minutes.  Mash melon with a potato masher to release the juice from the watermelon and muddle the mint.  (If the melon is firmer use a pastry blender).

Press mixture through a fine mesh sieve into a pitcher, discard solids.  Fill 4 tumblers with crushed ice, then top with mint sprigs.

Makes four 4-oz. cocktails

My Comments:
A very fine cooling drink, yummers!!!!!!
