Title: Yellow Squash Muffins

1 lb. yellow summer squash, cut into 1" slices
1 medium onion, chopped
1/2 cup butter, melted
1 egg, lightly beaten
1-1/2 cups all-purpose flour
1/2 cup sugar
2-1/2 tsp. baking powder
1/2 tsp. salt

Preheat the oven to 375*F.  Grease a  12 cup muffin tin.

Place 1" of water in a saucepan, add squash.  Bring to a boil.  Reduce heat, cover and simmer for 5 minutes or until tender.  Drain and mash.  In the meantime sauté the chopped onion in some butter until soft and golden, blot on paper toweling.  Stir in the butter, squash, onions and egg.

In a bowl combine the flour, sugar, baking powder and salt.  Stir in squash mixture just until moistened.

Fill greased muffin cups three-fourth full.  Bake for 20-25 minutes or until a toothpick comes out clean.  Cool for 5 minutes before removing from pan to a wire rack.  Sprinkle with a dusting of confectioners sugar.

Makes 1 dozen

This is a really good recipe we like these just to munch on or have with a vegetable dinner.
