Prime Rib is a once a year treat, so why not serve it with the Yorkshire Pudding.

6 eggs
1 tsp. each salt and black pepper
1 tsp. fresh parsley, chopped
1 tsp. fresh thyme, chopped
2 cups all-purpose flour
2 cups milk
Reserved Prim Rib drippings

Preheat the oven to 425*F.

Beat eggs, using a hand mixer, for one minute on medium, until foamy.  Stir in salt and pepper and chopped fresh herbs.

Alternately mix flour and milk with eggs, scraping down the sides of bowl if needed.  Beat just until ingredients are blended.  Cover the bowl with plastic wrap and keep in the refrigerator for up to 2 days before baking if necessary.

Grease each muffin cup by dropping 1/2 tsp. of pan drippings from your prime rib.  Put muffin pan into oven for 5 minutes or until it's smoking.  Now fill each muffin with 1/4 cup of cold Yorkshire Pudding batter.  The cold batter should sizzle when it hits the hot fat.  Bake for 15 minutes, reduce the temperature to 350*F and bake for 10 more minutes.  Serve puddings immediately.

Makes 12 servings
