2 cans plain black beans rinsed and drained
1 can shoe peg corn drained
1 purple onion chopped fine
1 bunch of cilantro stemmed and chopped
1 teaspoon salt
juice of 2 limes
Mix first 5 ingredients and squeeze lime juice over all. Stir and enjoy with corn chips.
