Title: stir-fried eggplant w-miso (soy bean paste)

 Italianingredients; 3/4 lb eggplants,sliced into 1/4 inch thick pcs..,  1/4 lb green bell pepper, seeds removed and thinly sliced,, 3 tbsp. miso (soy bean paste),, 1 1/2 tbsp. sugar,, 2 tbsp.veg.oil,, 1 1/2 tbsp mirin (sweet vinegar).....  preparation;   soak eggplants in a bowl of water for 10mins. and drain.dry with paper towel.mix miso,mirin and sugar in a small bowl and set aside.heat oil in a medium skillet and fry eggplant on medium heat untill softened.add green bell pepper and stirfry them untill softened.turn down heat to low.add miso mixture and stir quickly with the ingredients and stop the heat..
